She bakes too!

Thad is on a rampage to find the yummiest Banana Bread in town, so much so that EVERY patisserie that we step into, he HAS to order the banana bread if its there.

So a couple of weeks ago, I went to Coles and found the oldest, most black and over-riped bananas there was. And then, I left it on the kitchen counter somemore. Daniel was so disgusted with it (it was turning charcoal black) and wondering what the hell I was doing refusing to throw it out.

Anyway, I found a delicious simple recipe and I tried baking in our oven for the first time!

Banana Bread Recipe

3 or 4 ripe bananas, smashed (more bananas can be pretty awesome too I think)
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour

1. Preheat the oven to 350°F (175°C).
2. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
3. Mix in the sugar and egg.
4. Sprinkle the baking soda and salt over the mixture and mix in.
5. Add the flour last, mix. Pour mixture into a buttered 4×8 inch loaf pan.
6. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

Voila!! It was SO EASY and SO YUMMY. You don’t need a mixer, you don’t need funky ingredients, you don’t even need precise measuring cups! I didn’t even have a proper mixing bowl, so I just used my saucepan. And instead of proper measuring cups, I simply used my mug and “agaration“. Was initially worried that it might really be a flop, but noooo. The apartment was smelling of banana bread and it came out all moist on the inside and crusty on the outside. I’m never going to pay $4 for a slice of banana bread anymore.

If anyone is baking for the first time, the person should really start with the Banana Bread because you really can’t go wrong with it. Other things you can add to bring it up a notch includes adding a shot of espresso, or vanilla, or walnuts. Go on, have fun!

Can’t wait for him to try it when he gets home!

    i’m going to try this recipe out later as part of my maiden attempt at baking! decided to be greedy and add choc chips and nuts as well.
